Dulcie's Raspberry Slice.

Raspberry Slice

3 tablespoons butter (We used approx 100 g)

4 tablespoons sugar

1 teaspoon of vanilla

1 egg

1 cup of self-raising flour

(Topping)

Raspbery jam

1 cup of sugar

1 cup of coconut

1 egg

Method:

Pre-heat the oven to 160 degrees C.

Cream the butter, sugar and vanilla, then mix in the egg and add the flour.

Press the dough into a greased tray and spread generously with raspberry jam.

For the topping mix the cups of sugar and coconut and add the beaten egg.

Spread the topping over the jam.

Bake for 20 minutes or until topping browns slightly.

Cut while still warm in the tray and leave to cool.

 

We made this today...with a batch of Anzacs.

We have nibbles again!
